This is a yummy, spicy version of the classic shepherd's pie. There are many substitutions that can lower the calories and sodium to suit your needs/tastes. Using ground turkey, low-fat cheese and no salt added veggies are the easiest three I can think of. Also, I love Jiffy mix cornbread, but I'm sure there are healthier versions out there! Enjoy! Add seasonings, salt and pepper to taste. Stir in salsa, then pour mixture into 9x13 casserole dish. Add tomatoes and chili beans, mix thoroughly. Layer with the frozen corn, then cheese. Mix together the corn muffin mix, egg and milk, then pour the mixture on top of meat filling.
