1/2 tbsp dried rosemary
1/4 c plain yogurt or sour cream (I used Astro Bio Best plain 1% yogurt)
1 tsp olive oil
1 lb lean ground beef
1/2 cup chopped onion
1/2 cup frozen sweet corn
1 cup mushrooms, chopped
1/2 cup sweet red pepper, chopped
1/4 tsp black pepper
1 tbsp ketchup
3/4 cup chicken stock
1 tbsp all-purpose flour

Here is how you make Shepherds Pie Topped with Rosemary Garlic Mashed Potatoes:

Bring a large pot of salted water to a boil. Add potatoes and 1/4 cup chopped onions and cook until tender but still firm, about 15 minutes. Drain and mash. Mix in butter, yogurt, garlic puree, and rosemary. Add a splash of chicken stock if the potatoes aren't creamy enough. Set aside.Preheat oven to 350F.While potatoes are boiling, heat olive oil in skillet and cook 1/2 cup onions, frozen corn, red pepper and mushrooms until onions are translucent. Add in ground beef and cook until browned. Stir in flour and cook for 1 minute.Add in ketchup and chicken stock. Bring to a boil and reduce heat and cook for 5 minutes.Spread the meat and veggie mixture on the bottom of a 2 qt casserole dish.
