1/2 lb. Laura's Lean Beef
1/4 cup lentils
1 medium onion, chopped
1 clove garlic, chopped finely
2 large carrots, peeled and sliced
1 parsnip, peeled and sliced
1 tsp worchester sauce
1 tsp marjoram
1/2 tsp black pepper
1/4 tsp salt
1 1/2 cups frozen peas


For topping:
4 potatoes, peeled and chopped
1 tbs butter
3 oz. nonfat plain yogurt
2 tbs 1% milk


How Do I Make A Little Lighter Shepherd's Pie?

Here is how you make A Little Lighter Shepherd's Pie:

Preheat oven to 375.Place the chopped and peeled potatoes in a medium saucepan. Fill with water until the potatoes are just covered. Set on the stove over medium high heat to boil. Once potatoes are boiling, stir and cover. Cook until potatoes are tender, usually about 12-15 minutes. Once potatoes are tender, drain and set aside.Meanwhile, in a large nonstick or cast iron skillet, heat the olive oil over medium-high heat. Add the onion, carrots, parsnip, garlic, beef, and worchester sauce. Cook, stirring, for 2 minutes then add 1/2 cup of water and the lentils. Add the rest of the spices and cook, stirring frequently. When the mixture begins to look dry, add another 1/2 cup of water. Continue and repeat until all of the water has been used and absorbed into the lentils and the beef is cooked (about 15 minutes). Stir in the frozen peas and set aside.Add butter, yogurt, and milk to poatoes. Mash using a potato masher or hand-held blender. Set aside.Layer the beef mixture into an 8 x 8 casserole dish. Cover with the mashed potatoes and rough up the top with a fork (just for a decorative touch). Place in the oven and bake for 15 minutes, then change your oven to the broiler setting and bake for an additional 2 minutes to brown.Serve alongside a nice green salad for a tasty family dinner.
