Crust:
4 ounces cream cheese, softened
4 eggs
1/4 tsp Lawry's garlic salt
1/2 teaspoon Tajin seasoning
3 ounces colby cheese, shredded
1 tsp baking powder
3 tbsp blanched almond meal/flour

Filling:
1 lb ground beef (I used lean for the calculations)
1/2 chopped raw yellow onion
1 clove minced garlic
1 medium green bell pepper, chopped
1/4 cup frozen yellow corn
1 - 8 oz can tomato sauce (no sugar added)
1 small can sliced ripe olives (about 4 oz)
1 tsp chili powder (or to taste)
1 tsp cumin powder (or to taste)
1 tsp paprika (or to taste)
1 tbsp black pepper (or to taste)

Topping:
1 cup shredded cheddar cheese
1/2 cup diced scallions (green onions)


How Do I Make Carly's Low Carb Tamale Pie?

Here is how you make Carly's Low Carb Tamale Pie:

Crust: Beat or whisk the cream cheese and eggs until smooth. Add the baking powder, garlic salt and tajin and mix well. Stir in the colby cheese; mix well. Grease a 9 x 13" baking dish; spread the crust mixture evenly over the bottom. Bake at 350? for 25-30 minutes. Filling: While crust is baking, brown ground beef, onions, bell pepper and garlic over medium-high heat. Drain any fat and add seasonings and tomato sauce. Simmer on medium heat until slightly reduced then add corn and olives. When crust is finished, pour mixture over crust and spread evenly. Top with shredded cheddar and scallions.
