Here is how you make Traditional shepherd's pie:

Makes 6- 8 servings. Peel and cube potatoes, boil until cooked then mash. Adding a small amount of butter and milk. Mash should still be a bit dry. Coarsely chop leftover lamb roast in a food processor, or cook and drain 1 pound lamb mince. Chop onion and carrot. Heat up 1/2 teaspoon olive oil in a pan (I like to use the wok) and add both. Cook, stirring often, until the onions are softened slightly. Add peas, minced garlic, rosemary and season to taste. Cook for a further 5 - 10 minutes, stirring frequently. Combine cooked vegetables with meat in the pan. Make a gravy using a small amount of lard or reserved lamb fat if available. Add lamb or chicken stock. Season to taste. Pour enough of the gravy over the meat mixture to make a farly wet mixture. Spoon the mixture into a deep casserole dish. Cover the top with the mashed potatoes. MAke sure the edges are sealed. Run a fork across the top to make ridges. Dot the topwith butter if desired and seasonAt this point, the dish can be frozen. Just cover it and put t in the freezer when completely cooled. Thaw before cooking. Cooking: Preheat the oven to Gas mark 5, about 350F. Place the dish on a baking tray in case of spillage. Cook for 30 - 40 minutes, until hot and bubbling. Serve immediately.
