1/2 lb. ground turkey
1/2 bell pepper (I use red)
1 medium onion
4 cloves garlic
2 Tbsp. olive oil, extra virgin
salt
pepper
cumin
thyme
or any of your favorite seasonings
1 batch of your favorite biscuit recipe (or the bisquick kind if you prefer)
My biscuits are as follows:
2 cups flour
3 tsps. baking powder
1/4 tsp. baking soda
1 tsp. salt
3/4 cup lowfat buttermilk
1/4 cup oil


How Do I Make Mountain Man Upside Down Pie?

Here is how you make Mountain Man Upside Down Pie:

Preheat oven to 450ÂȘIn 12 inch cast iron skillet Caramelize onions add garlic and peppers towards the end saute until soft. Add ground meat and cook until browned all the way through. Add seasonings until it suits your taste. Turn off heat stir in eggs and pat flat. For biscuits mix all dry ingredients together and then stir in (I use a fork) the buttermilk and oil until dough forms a ball. Turn out onto wax paper knead 10X and then roll out to appropriate circle size. Bake in oven until biscut is golden on top, about 12-15 minutes.
