1 onion, chopped
2 cloves garlic, minced
1 medium zucchini, diced small

5 large eggs
1/4 c. Parmesan cheese, grated or shredded
1/4 c. mozzarella cheese, shredded
1/3 c. fresh herbs (as you like; sage, basil, thyme, parsley, etc), chopped
salt and pepper to taste


How Do I Make Quick Veggie Pie?

Here is how you make Quick Veggie Pie:

*Makes 4 servings - 1/4 of pie each*Spray a 9-in pie plate with cooking spray; place tortilla in pan and press down. Set aside.Preheat oven to 350 degrees F.In a large pan, saute onion, garlic and bell pepper 3-5 minutes, or until softened, in 1 T olive oil. Add zuchini and cook another 3-5 minutes. Toss in spinach and cook, stirring, until spinach is wilted. Remove from heat.Whisk together eggs until blended. Add in fresh herbs and salt and pepper as desired.Add veggie mixture to tortilla (it may seem very full - use your judgment and reserve filling if you need to) and pour eggs over evenly. Sprinkle cheeses over the top. Bake in a 350 degree oven for 30-35 minutes or until set when plate is jiggled. Allow to cool 5-10 minutes before cutting into quarters to serve.
