My father created this recipe which became my favorite food. I love the chewy texture of bulgur wheat and the flavors of the smoked sausage and V8 juice. If you don't have V8, substitue tomato juice and chopped celery or canned tomatoes & liquid to equal 2 1/2 cups.

1 1/2 Cup Onion, diced
1 1/2 Cup Bell Pepper (any color), diced
3 Garlic cloves, minced
1 pkg (14 oz.) Hillshire Farm Smoked Turkey Sausage
4 tsp Olive Oil
1 1/4 Cup Bulgur Wheat
3 1/2 Cup V8 Vegetable Juice
1 Tbsp Soy Sauce
3 drops Bitters, I use Peychauds
1 tsp Salt
1/2 tsp Black Pepper


How Do I Make Lloyd's Bulgur Pilaf?

Here is how you make Lloyd's Bulgur Pilaf:

Makes 8 1 cup servingsHeat large saute pan over medium high heat. Slice sausage into rounds. When pan is hot, add sausage and brown on both sides, about 5 minutes, stirring occasionally. Remove sausage from pan.Add 1 tbsp olive oil to pan then add onions, peppers and garlic, reduce heat to medium and cook until onion is translucent, about 10 minutes. When onion is translucent, add 1 tsp olive oil to pan and add bulgur wheat. Cook bulgur, stirring frequently, for about 5 minutes, until browned.Add V8 Juice, Bitters, Soy Sauce, Salt & Pepper, bring to a boil then reduce heat to low, cover and simmer 25 - 30 minutes or until bulgur is tender and liquid has been absorbed. Add additional liquid (I use water) during cooking if mixture dries out before bulgur is cooked.Number of Servings: 8Recipe submitted by SparkPeople user PENELOPEJ.
