1 tsp turmeric
3/4 tsp cumin
1 1/2 c rice (I like basmati)
1/2 c ham, diced (I use a thick-cut slice of Virginia ham from my local deli - ask for a #4 cut)
2 c chicken broth
1 can diced tomatoes, undrained
1/2 c edamame
1/2 c chopped green olives with pimiento

Brown chicken with oil in pan, adding salt, pepper & 1 tsp oregano. Remove chicken, sprinkle with lime juice & keep warm.Add onion, bell pepper & garlic to pan, cook until tender. Add spices, cook a minute. Add rice & ham, cook another minute. Add broth & tomatoes, bring to a boil.Place chicken pieces into pan, push into rice mixture. Cover & reduce heat, simmer for 18 minutes or until liquid is nearly absorbed. Add peas, cook 3 minutes.
