I created this recipe in an effort to duplicate the soup at our local Mexican restaurant. What Are The Ingredients For Deb's Sopa de Pollo Recipe?The ingredients for Deb's Sopa de Pollo are: 6 cups fat-free chicken broth1 lb uncooked boneless skinless chicken breast(s) 1 (14.5 oz) can diced tomatoes, undrained 1 medium onion, chopped 4 cloves garlic, minced 1 small jalapeno pepper, finely chopped 1 (4.5 oz) can chopped green chiles 1 tsp ground cumin 1/2 tsp black pepper, freshly ground 1/2 tsp cayenne pepper 1/2 tsp salt 1/2 cup Minute Brown Rice (uncooked) 1 cup frozen mixed vegetables 1 medium avocado, chopped into bite sized chunks 1 cup fresh cilantro, chopped 1 medium fresh lime How Do I Make Deb's Sopa de Pollo?Here is how you make Deb's Sopa de Pollo: In a large stock pot, bring broth to a boil. Add the raw chicken, canned tomatoes, onion, garlic, jalapeno, chopped green chiles, cumin, black pepper, cayenne, and salt. Simmer for approximately 25 minutes or until chicken is completely cooked. Remove chicken; let cool slightly, then shred with a fork; add chicken back to the pot. Add the uncooked rice and mixed vegetables. Cook approximately 10 minutes, or until the rice and vegetables are done. Peel and chop avocado. Add the avocado and fresh cilantro to the soup. Stir well.
