What Are The Ingredients For Lighter Pollo Fundito Recipe?The ingredients for Lighter Pollo Fundito are: 2 chicken thighs, bone & skin removed1 small onion, divided 1 cup green pepper strips 2 cloves garlic, divided 2 T. olive oil, divided 6 oz. Neufatchel cheese (reduced fat cream cheese) 1/2 c. chicken broth or stock 1 jalapeno pepper 1/2 t. cumin 1 T. dry cilantro 4 corn tortillas How Do I Make Lighter Pollo Fundito?Here is how you make Lighter Pollo Fundito: Heat one tablespoon of oil in a large, oven-safe skillet or stock pot over med-high heat. Add chicken thighs, seasoned with cumin and cilantro, and cook until brown on both sides. Move to side of pan. Add 3/4 of the onions (sliced), all the peppers, & one clove of garlic (sliced) to pan. Lightly salt veggies & chaicken at this time. Stir frequently until onions and peppers begin to get soft. Remove from heat, cover, and put pan into 250 degree oven for about an hour (you can leave pan on stove, too, if kept on very low heat. The idea is to get the chicken soft enough to shred.) Once chicken is cooked until soft and shreddable, remove from oven, shred chicken and toss with veggies in pan. Then set aside. In a small sauce pan, heat remaining oil over low. Use a fine grater and grate the remaining onion, garlic, and jalapeno (seeds removed) into the pan, working quickly. Then add the Neufatchel and chicken stock. Use a fork to stir and mash the cream cheese until you have a smooth, sauce-like consistency. Additional broth may be used if you prefer a thinner sauce. Reduce heat to very low to keep warm. Salt & pepper to taste.To assemble, warm corn tortillas through (you can steam them, but I prefer to heat them in a skillet until slightly crispy, folding them in half like a taco shell. Fill each tortilla with 1/4 of the shredded chicken/onion/pepper mixture and top with 1/4 of the sauce and enjoy.
