3 cloves garlic, finely grated
3 tbsp Olive oil
Salt and pepper to taste
1/2 tsp ground coriander
2 large tomatoes chopped
8 Chicken Drumsticks
Chopped Cilantro or Parsley
4 cups cooked white rice



How Do I Make Secco de Pollo?

Here is how you make Secco de Pollo:

Add 3 tbsp olive oil in a pot that has been heated over medium heat. Once heated add onions, some salt and pepper and saute until softened. Add the three grated garlic cloves and saute until softened. Add 1 can/bottle of your favourite beer and add all the drumsticks. Cover and bring to a boil, then reduce heat and simmer for 30 mins. Add the 2 chopped tomatoes, stir and then cover to simmer for additional 15 mins.
