What Are The Ingredients For Pollo zia Rosa Recipe?The ingredients for Pollo zia Rosa are: 6 chicken breasts, boneless and skinlesssalt pepper 2 tbsp fresh thyme, chopped 5-6 sprigs of fresh thyme, whole 6 slices prosciutto 1 small onion 6 slices fontina or havarti cheese flour (for dredging) 2 tbsp olive oil plus a little more as needed 1 cup fresh baby portobello mushrooms, sliced 1 cup marsala wine 2 cup chicken stock 1 tbsp flour or cornstarch mixed with 1/4 cup of water (if desired for thickening sauce) How Do I Make Pollo zia Rosa?Here is how you make Pollo zia Rosa: Add the oil to the pan and preheat, but don't let the oil burn. Butterfly the chicken breasts by slicing them not quite all the way through the middle. Season inside and outside of each breast with salt and pepper. Dredge the entire outside of the breast in the flour, open it up, and stuff it with a slice of prosciutto and a slice of cheese. Saute chicken breasts until brown on both sides in pan. Remove browned chicken from skillet. Add a little more oil if necessary. Add mushrooms, onions, and thyme to the skillet and saute on high heat until mushrooms and onions are browned. The mushroom liquid will deglaze the pan. When this happens, add the marsala and chicken stock, and reduce the liquid by half (about 5 minutes). Add the chicken back to the pan, and simmer until chicken is cooked through, about 5-10 more minutes, or until the internal temperature of the chicken reaches 180F. Transfer chicken to platter and pour the sauce over it, garnishing with fresh sprigs of thyme.
