2 tbsp olive oil
2 onions, chopped
1garlic clove, minced
1/4 c Dijon mustard
1 1/4 c skim milk
1/2 c white wine
1 tbsp fresh tarragon

Here is how you make Pork Medallions Dijon:

Slice pork into 3/4" medallions. Press flatter between your palms. Dredge pork in 3 tbsp of ww flour. Heat 1tbsp of oil in large non stick frying pan. Cook pork until golden brown on both sides, 5-7 minutes. Remover to plate. In same frying pan, heat 1 tbsp oil,add onions and garlic. Cook a few minutes. Add 2 tbsp ww flour, stir to coat onion. Stir in milk, wine. Cook, stirring, until thickened. Stir in tarragon. Add pork to pan and cook until heated through, about one minute.
