3 large potatoes, peeled and cubed (small cubes, about 1/2 inch)
1/2 onion, diced
1/4 c half and half (would likely work OK with regular milk; I wouldn't use anything less than 2% because it would just be too watery, you need the fat)
4 tsp butter
salt to taste
pepper to taste
paprika to taste
parsley flakes

Here is how you make Potato Bundles - adapted from Pioneer Woman:

Preheat oven to 425. Cut 4 pieces of aluminum foil about 6 inches wide and curl up the edges slightly. Divide potatoes amongst foil, divide onion as well. Put 1 tsp butter and about 1 Tbsp half and half in each bundle. Salt, pepper, and paprika to taste. Put a dash of parsley flakes on each. Bring foil up around potatoes and gently squeeze the top together. Cook at 425 for about 25 min. Open the packets up slightly and let bake another 5 min just to get a little more bubble in them.
