Here is how you make Egg in a Potato Basket:

Clean and scrub potato. If you have time, stick potato in the oven at 375-400 degrees for 45 min. Take out. Use a knife to cut an "x" in the top of potato (don't go all the way through). Use a large wooden spoon and smash the potato down to form the basket shape. It's okay if it's not prefect! Drizzle with a little Extra Virgin Olive Oil and sprinkle with a dash of salt. Place back in the oven for the remaining 15 min so the potato will cook thoroughly and get crispy around the edges.If you are like me and don't have a ton of time: Preheat oven to 450 degrees. Wrap potato in a paper towel and microwave for about 4 to 5 minutes. Remove. Cut "x" in top and smash down with wooden spoon to form your basket. Drizzle with olive oil and sprinkle with salt. Place in oven to get crispy - 10 to 15 minutes.Bring a pot of water to a boil. I think it's easiest to use a large spoon or laddle to slowly submerge the egg into the boil water. Most of it will stay intact this way...boil for 3 or so minutes depending on how hard you like the egg cooked. Spoon egg out and place in your potato "basket". Sprinkle with a dash of salt and pepper or hot sauce if you like. Also great to serve over a bed of leafy greens that have been sprinkled with extra virgin olive oil and a squeeze of lemon juice. ~~~~~~~~~~~~~~~My husband was SO skeptical about this meal!
