EVOO 3 C. 99% fat-free chicken broth (divided into 2 portions) salt pepper 2 T. flour 1 t. paprika 2 T. ketchup or tomato paste 2 T. white wine vinegar 1 t. cayenne pepper (optional) How Do I Make Savory Ham and Potato Chunks?Here is how you make Savory Ham and Potato Chunks: Dice ham into small chunks. Spray skillet with non-stick cooking spray. Add ham and brown over med-hi heat. While the ham is cooking, peel the potatoes and dice into bite-size chunks. Remove from skillet into a large bowl and set aside. Add 1 T. of EVOO to the skillet and add potato chunks. Brown until golden. Add 1.5 C. of chicken broth, salt and pepper. Cover and simmer potatoes until soft, approximately 15-20 minutes. Remove lid and simmer potatoes over medium heat until the remaining chicken broth is absorped. Dump potatoes into bowl with the ham.Add 1.5 C. chicken broth to skillet. In a small bowl, blend 2 T. flour with 1 tsp. of paprika. Whisk flour mixture into chicken broth until smooth. Stir in 2 T. of ketchup and 2 T. of white wine vinegar. Continue to stir sauce until it becomes thick and bubbly. If you like spice, at this point add 1 t. of cayenne pepper.
