Cut potatoes in half lengthwise and scoop out the pulp. Put skins on a greased baking sheet. Mix oil, parmesan cheese, garlic, pepper & paprika. Brush mixture over both sides of potato skins. Bake at 475 for 7 - 10 minutes. Add cheddar cheese, bacon, and onion and bake for 2 - 3 more minutes. Top with sour cream and serve.
