1 box Barilla thin lasagna noodles
1 cup pesto
3 cups 2% milk
8 oz each shredded mozzarella and parmesan cheese


How Do I Make Sweet Potato Pesto Lasagna?

Here is how you make Sweet Potato Pesto Lasagna:

Peel, thinly slice (can use food processor) and lightly steam the sweet potatoes. Meanwhile, heat about 2 liters of water to boiling. Combine the pesto and milk in a bowl and set aside. Grease a 9 x 13 baking dish. In another flat pan with sides, pour about 1" of the boiling water. Lay 3 pieces of noodle in the hot water. Let them soak for about 3 minutes. Meanwhile, cover the bottom of the prepared baking dish with a thin layer of the pesto/milk mixture. Remove the soaked noodles with tongs and lay them on top the pesto mixture in the baking dish. Put three more pieces of noodle in the water to soak, adding more hot water as needed to keep the temp up. Spread a single layer of sweet potatoes on the noodles, cover with about 1/2 cup of the pesto/milk mixture. Sprinkle lightly with parmesan and mozzarella cheese. Repeat the layering until you have used all the noodles. There are generally enough noodles to do 7 layers. Do not put sweet potatoes on the top of the last noodle, but pour the rest of the pesto mixture and cover with a good coating of the parmesan and mozzarella. Cover the baking dish with foil. Bake at 375 for 35 minutes. Remove the foil and continue baking for another 10 minutes. This can be made ahead and baked the next day.
