These go great with the Mediterranean Turkey burgers and they're easy to make on the grill or in the broiler. You can lower the sodium by using a good grey sea salt (Celtic Grey is lower in sodium) instead of table salt. You can also add lots more flavor with some additional herbs. Rinse with cold water so they stop cooking. Line a small tray (a toaster oven tray works great for this) with enough foil so that you can fold it up and seal it for grilling. Spray the foil with a little cooking spray. Lay the potato slices on the foil in a shingle fashion. Brush with olive oil just to coat. Brush with balsamic vinegar and sprinkle with salt, pepper, garlic powder, oregano and paprika. Divide the onion slices into rings and scatter them on top of the potatoes. Fold the edges of the foil up and fold over. Grill for about 20 minutes.
