1 3/4 cup cheddar cheese (lowfat if possible)

How Do I Make Modified Scalloped Potatoes?

Here is how you make Modified Scalloped Potatoes:

Preheat oven to 350 degreesIn a saucepan over medium heat, combine thinly sliced onion, minced garlic and butter. When onions have begun to soften, stir in milk and add flour. Whisk flour until dissolved. Heat over medium in uncovered saucepan until mixture has thickened (5-7 minutes). Add salt and pepper to taste.Thinly slice potatoes width-wise (like potato chips) and set aside. Coat a 9" by 9" clear baking dish with non-stick spray (I use Misto* with vegetable oil rather than Pam or an artificially flavored spray)Add cheese to onion mixture in saucepan and let melt completely. Remove from heat to prepare to layer in dish.When mixture has thickened put a very thin layer in the bottom of the dish. Alternate layers of potatoes and sauce, ensuring not to let layers of potatoes touch one another with sauce.Cook covered with aluminum foil for 40 minutes.After 40 minutes, cook uncovered for an additional 15-20 minutes or until starting to brown at the edges.Serves 4.Number of Servings: 4Recipe submitted by SparkPeople user STEELTOE.
