Slice potatoes with a mandolin to get very thin slices. (if you don't have a mandolin, just slice them as thinly as you can)Make gravy by heating the olive oil and whisking in the flour until cooked (about 2 minutes). Toss in a pinch of the parmesan, then slowly add the chicken stock a little at a time, constantly whisking until it becomes the consistancy of a semi-thick gravy. Layer the potatoes into an 8 x 8 baking dish. Pour gravy over, salt and pepper to taste. Top with the remaining parmesan cheese and cover.
