Here is how you make simple scalloped potatoes:

Preheat oven to 375. Spray a 1.5 qt stoneware or glass casserole dish with non stick spray. Peel and slice potatoes with a mandolin slicer if you have one- saves a lot of time! Layer about 1/3 potato slices at a time, very lightly sprinkle each layer with salt/pepper and dill weed, about 1/4 of the grated cheese. Continue with 2 more layers of potatoes and seasoning, but before adding grated cheese, spread the cheddar cheese soup over potatoes, add a can of milk (more or less depending on how deep your potato layers are-milk should come almost to top layer of potatoes). Sprinkle remaining cheese on top, and bake about 375 degrees for 45-60 minutes. Check after 30 minutes, and if browning too quick, turn down oven to 300 and bake additional 30 minutes, until tender and bubbly. I don't measure everything precisely, but it's a simple way to make potatoes that don't have a lot of preservatives or a lot of prep.
