1 2-lb bag of frozen cubed potatoes (Southern style hash browns)
1 can Cream of Onion soup
1 cup sour cream (half a container)
1/2 cup melted butter (one stick)
2 cups shredded cheddar cheese
1 cup chopped red onion


TOPPING:

1 cup shredded cheddar cheese
1/2 cup melted butter (one stick)
1 sleeve of Ritz crackers
Handful of bacon bits or crumbled bacon

Here is how you make F'ing Awesome Potatoes (aka Funeral Potatoes):

Preheat oven to 350 degrees. While preheating, put potatoes in a 13x9 baking pan and partially bake the potatoes for 10 minutes. Meanwhile, in a large bowl mix together the soup, sour cream, 1 stick of melted butter, 2 cups of cheese, and the red onion. Mix well.Add potatoes to this mixture and mix to coat well, then spread evenly in the 13x9 pan.Spread 1 cup of melted cheese all over the top of the potatoes. Crush the Ritz crackers finely and mix in a bowl with one stick of melted butter.
