1/2 c uncooked quinoa
1 c. beef broth
1 tsp. olive oil
2 cloves of garlic, sliced thin
1 c. fresh spinach
4 oz cooked lamb kabobs or leg of lamb, Cubed.
1 med tomato (chopped)
1/2 c. diced cucumber
1/2 tsp dried mint leaves/or 2 fresh leaves chopped fine
1 oz feta cheese


How Do I Make Greek Quinoa?

Here is how you make Greek Quinoa:

rinse the quinoa in a strainer. In a small sauce pan, add the quinoa and 1 c. beef broth. Bring to a boil over high heat, then cover and reduce heat to simmer until water is absorbed, about 10-15 minutes. Meanwhile in a skillet, heat the oil, add the garlic and saute, careful not to burn the garlic. When the quinoa is done, add it to the skillet with the remaining ingredients and toss.
