Makes 4 servingsAdd quinoa and chicken broth to a small pan, bring to a boil, then cover and reduce heat to a simmer. Cook about 15 minutes, until broth is absorbed.Cube chicken breast and season with salt and pepper. Mince garlic. Heat the olive oil in a large skillet and add chicken and garlic. Cook chicken until done-no pink is visible inside.Add quinoa to the chicken, then add spinach, green onion, tomatoes, oregano, and pine nuts. Toss to mix. Cover skillet and heat on low 5-10 minutes, enough to heat the mix through and wilt the spinach a bit, your preference. Add feta cheese and avocado. Toss lightly and serve.Number of Servings: 4
