Salt & pepper meat on all sides, patting in with your hand. Place meat in Dutch oven or any other pan that will hold it's size. Pour the 1 cup of beef broth down the side of the pan (so as to not wash the seasoning off meat). Insert a meat thermometer into meat. Do not allow it to touch the bone (if using meat with bone). Make sure it's inserted into widest portion of meat so that it's in the center of the roast.Put meat into preheated oven (uncovered). Bake until meat thermometer registers how you prefer your meat (rare, medium, well, etc.). Approximately 1 hour.Take roast from oven. Cover with lid or aluminum foil. Allow it to rest 10 minutes prior to slicing.Slice & eat. You can eat with the au jus that remains in the bottom of the pan, or make your own horseradish sauce.
