2-3 bell peppers
2-3 onions (more if they're small)
1-2 jalapenos, finely diced (optional)
1 whole Hillshire Farms Kielbasa (I used the 'Lite', you can also use the turkey one)
1 12 oz can small red beans (or any beans you like)
1 12 oz can RoTel tomatoes with chilies (or any other can of tomatoes you choose-- you can even use salsa)
Zatarain's Creole Seasoning (or any other New Orleans style seasoning you choose)

Here is how you make Pennsylvania Creole Rice and Beans:

Finely dice peppers and onion and saute in large skillet with olive oil. Slice kielbasa into rounds and add. Add beans and tomatoes and simmer for a few minutes to blend flavors. Season to taste. Fold in cooked rice and mix thoroughly. Makes about 12 1 cup servings. Recipe is calculated with full-fat kielbasa because that was my only choice here but Hillshire Farms makes both 'Lite' and turkey varieties which would save calories. I used the Lite.
