1 lb ground trukey (93% lean)
1 small onion chopped
1 clove of garlic pressed
1 6oz can tomato paste
3/4 c water
1 c cooked brown rice
3 c reduced fat cheddar cheese or mexican blend
1 1/2 tsp oregano
1 tsp garlic salt
1 tbsp chili powder
pinch of red pepper (optional)
10 - 12 flour tortillas (low carb, heart healthy)
8 oz salsa
1 can enchilada sauce


How Do I Make Beef and Rice Enchilada?

Here is how you make Beef and Rice Enchilada:

Cook ground turkey with onion & garlic until no longer pink. Add tomato paste, water, cooked rice, 2 c cheese, salsa and seasonings. Stir to mix well. Cook over low heat until thickens. Meanwhile, spread 1/4 cup enchilada sauce in bottom of 13 x 9 pan that has been coated with cooking spray. Spread 1/2 cup meat mixture onto tortilla and roll. Place enchiladas seam side down into pan. Pour remaining sauce over enchiladas and top with 1 c cheese. Bake at 350 for 10- 20 min. Makes 10- 12 enchiladas. We like to top them with lettuce, tomato, green onions and cilantro for an authentic look and taste.
