In large non stick skillet, heat olive oil and add onion, stir until becomes clear. Add other vegetables and keep stirring until heated through, still crispy. Add cooked rice and heat. Make a "well" in the middle of skillet and add beaten eggs, stir the rice mixture back into the eggs and cook until done, add shrimp cook till heated through and shrimp is done.
