1 egg
1 cup frozen mixed vegetables ( I use carrots, green beans, lima beans, and corn, but you can use your favorite mixture)
Half white onion
Soy sauce to taste
Cooking Spray


How Do I Make Casie's "Fried" Rice?

Here is how you make Casie's "Fried" Rice:

1. Cook the rice as directed on the package2. Spray a large pan (I use a wok) with the cooking spray3. Chop up the onion and cook it until translucent4. Add the rice to the pan with the onion. Cook for 2 or 3 minutes5. Move the rice and onion mixture to the edges of the pan, making a hole all the way down to the pan. Put the egg in the cleared out area and scramble it6. Mix the scrambled egg into the rice and onion mixture7. Mix in the frozen vegetables and cook for about 5 minutes or until the vegetables are thawed out and hot8. Add soy sauce to taste (I used 1 tbsp for the nutritional calculation, but I never really use that much)Makes 2 large servings as an entree or you can obviously split it up into smaller servings as a side.
