2 cups Fresh Mushrooms, sliced
2 Tbsp. Lite Soy Sauce
2 Large Eggs
1 cup Frozen Green Peas, thawed
3 cups Brown Rice, cooked
2 large Naval Oranges, peeled, sectioned & chopped into bite-sized pieces


How Do I Make Fruited Brown Rice?

Here is how you make Fruited Brown Rice:

Coat large skillet with olive oil spray. Saute carrot, onion, & celery until just tender. Add pepper, Crumbles, mushrooms & soy sauce. Continue cooking over medium heat about 5 minutes. Push all to one side, add a bit more spray to skillet, and cook eggs until done. Add thawed peas; mix all over low heat until heated through. Add hot rice and remove from heat. Finally, add fresh orange chunks* and fold gently into rice mixture.*May substitute other seasonal fruit for oranges, such as mangoes. Recipe makes eleven 1-cup servings.
