Combine grain blend, water, spices and a dash of salt (if desired) into a sauce pan. Cover and bring to a boil, then reduce to simmer for 40-45 minutes, until rice is tender. Allow rice to stand for 5 minutes, then fluff with fork. Meanwhile, heat olive oil in pan and cook onion for 10-12 minutes until caramelized. Add onion, raisins, almonds to rice and toss.
