Start by preparing a large package of yellow rice in its own large pot.

In separate skillet, in a little olive oil, soften 1 chopped medium onion and then add 2 cloves of chopped garlic. Cut up 5 slices of lunchmeat ham and add to skillet. Add frozen green peas. Zest 1 lemon and squeeze juice from same lemon into pan. Add chicken broth. Add salt and pepper as you wish. Stir all well.

When rice is done, add skillet ingredients into rice and stir. Add 1 cup sour cream and 1 cup grated cheddar cheese. Stir and then pour all into 11X13 baking dish. Add 1 more cup of cheese on top.

Bake at 375 degrees for 25 minutes.
