1/2 C. Onions, chopped
1/2 C. Celery, chopped
1 C. Mixed Mushrooms (I used button and portobello)
1 C. Long Grain Brown Rice
1 C. Dupuy Lentils (Black French Lentils)
2 T. Cumin
1 T. Cinnamon
1/2 tsp. Cayenne
3 C. Kale shreded
4 C. Vegetable Broth
Chopped Parsley or Cilantro to garnish.


How Do I Make Brown Rice, Lentils and Kale?

Here is how you make Brown Rice, Lentils and Kale:

Saute Onions and Celery over medium heat until soft in 3T of OilAdd Mushrooms and Cook for 5-7 minutes until Mixture is deep golden brown.Add Brown Rice and Lentils (try to find Dupuy or Black French Lentils as they have the same cooking time and absorbtion ratio as the brown rice). Add spices. Stir to coat with the excess oil and fry for 1-2 minutes.Add Broth and Kale, cover and cook on med-low heat for 30-40 minutes or until rice and lentils are tender.
