Saute until rice starts to brown.Add water and vegetables, bring to a boil.Cook uncovered for 10 minutes, then cover, reduce heat to medium-low and simmer for 15 minutes.Check rice and, if necessary, simmer an additional 5 minutes.If adding meat, add during last 10 minutes of cooking time.Season with salt, to taste.This dish makes 8-one cup servings.*For a more flavorful dish, chicken broth may be substituted.
