Saute onions in olive oil in a large pot until brown. Salt and pepper roast, add to pan, sear on all sides. Reduce heat to low. Add apple juice, apple slices, thyme, and beef broth. Cover and simmer for 3 hours.With approximately 50 minutes left in cooking time, add a cup of wild rice and 3 cups of vegetable broth to a sauce pan. Bring to a boil. Reduce heat to low, cover and cook until liquid is completely absorbed.Remove roast, apples, and onions to a platter. Raise heat and reduce liquid until thick and rich.
