Here is how you make Salmon with Rice and Peas:

This recipe makes 2 servingsRice and Peas1. Put a pan with a tight fitting lid onto medium to high heat, add half of the sesame oil to the pan. Warm it for a half a minute to a minute. Add the rice. Mix the rice around for about a minute or two so that it is coated with the oil and gets a bit cooked. (Don't burn the rice, but it can be slightly brown). 2. Add 150 mls of hot water from the tap to the pan, turn up the heat to high - You will need to stay and watch the rice while the heat is high! - add half the package of peas (as called for in the recipe) tie off the rest and put back in the freezer to use next time. Stir. Immediately add about a teaspoon of salt and a third of the lime juice. Stir it to make sure the peas are all free from each other. Now, place the lid on the pot of rice and as soon as the rice boils (check by lifting the lid slightly and be careful that the rice doesn't boil over), turn the heat to the lowest possible setting with the lid on. Let it cook for about 15 minutes on very low heat with the lid on (while you make the fish), then set it aside for at least 5 minutes off of the heat, but with the lid still on.Fish4. Wash the fish and pat it dry. Put salt and pepper on skinless sides of the fillet. Place the other half of the sesame oil into a frying pan and heat under medium heat. 5. After the pan is warm add the fillets, skin side down. Cook on each side for about 7 to 8 minutes for fish that is about an inch thick. You will be able to adjust the cook time to your taste when you get a little experience cooking fish. Some like it raw in the center. 6. Pour the rest of the lime juice just over the fish before turning off the heat, cover and set aside for 5 minutes.Serve the rice with the fish for a healthy meal. Sometimes I also add a little soy sauce to the rice prior to serving and like to remove the fish skin after cooking. Some like to eat the skin.
