1 cup finely sliced sweet Red Bell Peppers
1 cup finely sliced Red Cabbage
1 cup finely sliced Regular Cabbage
1 cup finely sliced Shallots
1 cup thinly sliced Broccoli Florets
1 Cup Oyster Mushrooms torn into strips
1 cup Snow Peas
1 cup Leeks both White and Green parts sliced in 2" long strips
1 large Stalk Celery,cut in thin strips
0.5 cup Unbleached All Purpose Wheat Flour
0.5 cup Tomato Paste
0.5 Cider Vinegar
2.5 tbsps.Low Sodium Soy Sauce
2 tbsps. Red Chilli Powder
1.5 tbsps.Organic Brown Sugar
1 tsp. Black Pepper Powder
Salt to taste
2.5 " piece Ginger Root
5 cloves (flakes) Peeled Garlic
7-10 whole Dry Red Chillies
1.5 tbsps. Sesame Oil

PREPARATIONCut Pork into 2.5 " strips.Wash,pat dry and marinate in 0.5 tbsp. Soy Sauce,1.5 tbsp.Cider Vinegar,Black Pepper Powder and 2 tbsp.Flour.Mix well,cover and keep aside for 30 minutes.Pick,clean and wash Rice.Soak in lots of warm water for 30 minutes in a large Pot.Finely mince the Ginger and Garlic.Remove stalks and break the Dried whole Red Chillies into 2-3 pieces each.Finely slice all the Vegetables except Snow Peas into thin Strips.Blend together the remaining Cider Vinegar,Soy Sauce,Tomato Paste,Red Chilli Powder,Brown Sugar and 2 tbsps.Flour with a little Water to a smooth Paste for the Sauce.There should be no lumps in this.METHODBoil the Rice in the Pot it was soaked in.Drain and rinse under running Water when fully cooked to remove all the Starch.Heat Sesame Oil in a large Non-Stick Wok.Add the marinated Pork and saute over high heat till well browned.Remove the browned Pork and keep aside.Lower heat and add the finely minced Ginger,Garlic and broken Dry Red Chillies.Saute till aromatic.Add the sliced Leeks and Shallots.Saute for 2-3 minutes.Add the rest of the Vegetables and saute till wilted.Add the browned Pork and saute all the Ingredients till Pork is fully cooked.Add the prepared Sauce and mix in well.Thin with little Water to desired consistency, stirring well all the while.Cover and simmer till the Sauce is cooked--about 3-5 minutes.Serve over the hot,boiled Rice as a satisfying hot one dish Meal.Serving Size:?Serves 6
