1 lb 90% lean ground beef
1 medium onion, chopped finely (1C)
2-4 T dried basil
2 t garlic powder
salt and pepper (needs a lot of pepper, salt depends on taste and amount used when rice is cooked)
1 can cream of mushroom soup (low salt/fat OK, adjust S & P)
1 can half and half cream (I use no-fat)
1/2 can of dry vermouth
1 cup frozen peas
2 T butter


How Do I Make Blacksburg Rice?

Here is how you make Blacksburg Rice:

1. Cook the rice and set aside2. Br own and drain the beef. Add onions, stir until soft. Add spices to taste. You may add more basil; it should be strongly flavoured!3. Stir in the mushroom soup, cream and vermouth; blend.4. Add the peas, frozen or thawed. Stir until warmed through.5. Check for seasonings. Into sprayed casserole. Dot with specks of butter.6. Bake at 375-400 dgrees, covered for 40 minutes of cold from fridge, or 30 minutes if allowed to set out first. Uncover and bake about 10-15 minutes more until bubbly! Let it rest 10 minutes, then serve! Makes 6 one and a half cup servings!
