When rice is about 1/2 done (about 20 minutes), Chop onion and pepper. Heat oil on Medium high heat in 8 quart stock pot. Add onion and pepper. Cook until tender, stirring occasionally.Cut Chicken into small bite sized pieces. Add to pot with onion and pepper. Add remaining seasoning. Cook until chicken is fully cooked.
