*Place 1 tablespoon raw diced onion in a medium sized skillet at high heat. Cook onions till they start to turn brown, about 1 minute. *While onions are cooking, mix 1 tablespoon cream of mushroom soup (I used Campbell's regular condensed, but you can get healthier version for your dietary needs) with 1/2 cup of water. Set aside.*Add a few sprays of nonstick cooking spray to skillet, and place the 4 ounce salmon fillet in with the onions. Cook thoroughly, about 4 minutes, flipping each minute to prevent burning.*Add 1 cup frozen spinach, 1/4 cup sliced mushrooms, 1 teaspoon garlic, a dash of ground pepper, and soup mixture to skillet. Continue cooking on high.*While skillet mixture is cooking, spread 1 cup precooked rice on a dinner plate. Microwave on high for 60 seconds.*Cook skillet mixture till water has evaporated, leaving only the creamy vegetable mixture and salmon. Place salmon on top of warmed rice, then spread spinach mixture over entire dish.Number of Servings: 1Recipe submitted by SparkPeople user JACWO2.
