1 Gigantic carrot, or 3 regular - chopped
1-2 onions, chopped
5 small potatoes, diced
1 sweet potato, diced
1 large or 3 small beets, peeled and diced
3 tbsp. olive oil
Dried rosemary - about 2 tbsp.
Salt and pepper to taste

Here is how you make Roasted Winter Root Vegetables:

Chop or dice all veg. to roughly about the same size.Put all into a large roaster and mix up.Drizzle olive oil over all, then the rosemary. Again, mix up so that all veg., have a bit of olive oil.Cover the pan with foil and put into a 375 degree oven for about 30 minutes. Remove foil and toss the veg around. Return to oven uncovered for another 10-15 minutes. Pull out again and toss the veg. Return to oven... repeat this step about 3-4 times or until the vegies have shrunk in size and most of the liquid in the pan has condensed.
