Here is how you make Chuck Roast w/Roasted Veggies:

In a 9 x 13 roasting pan w/lid (I use stone ware) distribute olive oil over the bottom. Mix chopped veggies in roaster. Mix garlic into diced tomatoes & pour over veggies. Mix all veggies & distribute evenly over bottom of roaster. Place Chuck Roast on top of veggies, cover with lidBake at 325-350 until desired doneness.
