4 Summer squash (I used 2 green and 2 yellow)

1/2 lb Asparagus

1 plum tomato

1 cup of sliced mushrooms

1/2 can spinach

1 shallot (minced)

1 clove of garlic


Cut veggies into bite sized pieces and put into roasting pan.

Dice garlic and shallots and add to pan.

Add spinach and ranch dressing packet.

Mix together.

Bake at 425 until tender (about 20-30 minutes).
