Combine the quinoa and broth in a medium saucepan; bring to a boil. Reduce the heat and simmer, covered, until the quinoa is yender, about 10 minutes. Drain.2. Transfer to a large bowl and let cool slightly.3. Mix orange juice and balsamic vinegar together. Set aside. Dice up apple and chop almonds.4. Add the apple, cranberries, scallions and orange & balsamic vineger dressing mixture to teh quinoa. Toss to coat.
