Smack the clove of garlic with the side of your knife to crush it lightly, then add it and the thyme sprigs to the beans & water. In a saute pan, heat the olive oil over medium-high heat. Add the sea scallops and sear them on one side, then flip them over and add in the shrimp, season with salt and pepper, and then add the lemon juice. Reduce heat to medium. Cook for a couple of minutes, until he shrimp is almost done, then throw in the zucchini. When the zucchini is tender and the shrimp is cooked through, add the onion, tomatoes and parsley, then drain the beans (discard the garlic clove & thyme sprigs) and add them in too. Season to taste with salt & pepper and toss well to combine. Serve warm.
