Bring to a boil. Add rinsed quinoa and stir. Reduce heat to a simmer and replace lid. Simmer for 11-12 minutes, or until water is absorbed. While quinoa is cooking, cook your green beans separately until al dente. Pour your lemon juice and olive oil into a large bowl. Add all your herbs and garlic; mix well. Add your cooked quinoa, cooked and drained green beans, drained pinto bean, and the chopped vegetables; mix well. Add salt and fresh pepper to taste. Ready to serve, or chill and serve.
