What Are The Ingredients For Mediterranean Quinoa Salad Recipe?The ingredients for Mediterranean Quinoa Salad are: 0.5 cup Ancient Harvest Traditional Whole Grain Quinoa, 1 serving =.25 cup dry1.0 cup Vegetable Broth 0.25 tsp Salt 1.75 cup Chickpeas (garbanzo beans) 1.0 large (8-1/4" long) Cucumber (peeled) 15.0 serving Cherry Tomatoes, Fresh, 1 Tomato 0.25 cup Parsley 0.75 cup Red Onion Raw (1/4 cup, 40g or 1.4oz) 2.0 tbsp Ken's Balsamic & Basil Vinaigrette How Do I Make Mediterranean Quinoa Salad?Here is how you make Mediterranean Quinoa Salad: Ingredients: 1 acorn squash, halved and cleaned 1/2 cup quinoa 1 cup vegetable broth 1 can garbanzo beans 1 cup chopped cherry tomatoes 1 large cucumber chopped 1/2 red onion chopped 1/4 cup chopped parsley Crumbled Feta for topping as desired (if vegan omit) Preheat oven to 400 degrees. Place halved acorn squash face down in a large baking dish. Fill with about 1 inch of water. Place dish with squash in oven for ~ 20 to 30 minutes (squash is done when feels soft to touch). While squash is cooking, place broth and quinoa in pot. Bring to a boil, cover with lid, turn down to a simmer and cook for ~ 20 minutes (or as per instructions on quinoa package). While quinoa and squash are cooking, drain and rinse garbanzo beans. Clean and chop remaining veggies. And add all to a bowl. Mix well. Once quinoa is done cooking. Allow to cool and add to bowl and mix. If desired for added flavor, add 2 tbsp favorite homemade or store bought balsamic vinaigrette. Once squash is done cooking, remove from pan and allow to cool. Top squash with ~ 1 cup of salad.
