Here is how you make Vietnamese Rice Noodle Salad with Grilled Shrimp:

Cook rice noodles according to package directions. Drain. Rinse with cold water and drain again. Meanwhile, to make dressing, stir together chopped onion (1/4 cup), vinegar, fish sauce and sugar until sugar dissolves. Set aside. Spray grill pan with olive oil-place shrimp in grill pan and cook until just opaque in center, about 2 minutes on each side. Transfer to plate.
